This product’s distinctive feature is its ability to develop complex aroma compounds with longterm stability and to extract flavonoids, whether in the form of tannins or anthocyanins, leading to long-term colour intensity. Main application: for the production of full-bodied red wines. Composition: Saccharomyces cerevisiae r.f. bayanus. Dosage: • 15–25 g/hL under normal conditions; • 30–40 g/hL for stuck fermentation or in the most difficult cases.
