Zimopec P110L performs an enzymatic action on soluble and insoluble pectins and helps reduce the viscosity of the product in a short timespan. The advantages of using Zimopec P110L are a greater yield of juice, a reduction in pre-filtration and/or pre-clarification waiting times, greater stability in the final product and a reduction in the quantities of fining agents required. Composition: enzymatic preparation with pectolytic activity obtained from Aspergillus Niger. Main application: suitable for the treatment of pressed grapes and must; its ability to completely break down pectins greatly facilitates later fining and filtration operations. Dosage: • 0,5–2 mL/hL.
